Love cheese! Hate wastage!

You have few crumbs of cheese in the fridge close to their use by dates… You spend lots of money and you don’t want to waste…

Here is a good recipe to create a true beauty!

Put all the leftover cheese in a food processor let’s say 50gr each, cheddar, blue cheese and brie, with 50 gr of feta cheese and 30 gr of butter with a spoonful of crushed raw nut and 1 tbs of creme fraiche or yogurt. Mix until creamy, add a spoonful of breadcrumbs if too loose. Chill the mixture in the fridge at least 2 hours. Then roll into grated nuts or grated lemon zest or even both, as 2 cm balls…

Enjoy as a canape or antipasti or a colour on the cheese board.

Here I rolled my cheese balls into lemon zest and cracked mix peppercorn
